HOW TO: Perfect Sausage Patties

Perfect Slices

  1. Select your favorite brand & flavor:

    1 - 16 oz pkg Pork Sausage Roll

    • Must not be frozen, defrost in the refrigerator overnight for perfect texture

    • Should be refrigerator temperature for precise slicing

  2. Remove plastic packaging, keeping the roll intact

    • Use a sharp knife to slice the full length of the plastic sleeve and cut the plastic ends to remove the metal ring, then peal back the plastic

  3. Use a sharp knife and mark where it will be sliced

    • For 1 oz slices, mark half (2), half each (4), then half again (8) and a final half (16)

    • 10 slices is much easier, allowing for patties that are about 1.5 oz

  4. Use non-flavored dental floss (or a length of thread) to cut at the marks into individual slices

    • Slide the floss under the tube of sausage

    • At each mark: bring the two ends up over the top, cross, and pull tightly together, slicing through the sausage and creating a perfect disk

Pan Fry

  1. Heat a skillet over medium heat

  2. Place the patties in the hot skillet, arranging in a single layer (divide into batches if needed)

  3. Cook until browned (5-6 minutes), flip and continue cooking until the patty is cooked through (3-4 minutes)

  4. Remove fully cooked patties from skillet, placing on a paper-towel lined plate

  5. Transfer patties a serving platter

HOW TO: Chipotle Pepper Purée & Preserve

Purée a can of chipotle peppers in adobo sauce, use what you need and then individually preserve the rest for easy use.

Chipotle Peppers in Adobo Sauce is an ingredient made from roasted, dried jalapenos preserved in a spiced tomato sauce. You can find canned Chipotle Peppers in Adobo Sauce in most grocery stores and add amazing flavor and heat to any recipe.

Generally, a recipe calls for only one pepper with the accompanying sauce. As there are a number of peppers per can, Brenda created this recipe to teach us how to freeze the extra purée for easy use.


HOW TO: Chipotle Pepper Purée & Preserve

Chipotle Pepper Purée

  • Transfer the entire contents of 1 can Chipotle Peppers in Adobo Sauce to a blender*

  • Blend smooth

    • Note: 1 Tbsp of the resulting purée is equivalent to 1 pepper

Preserve the leftovers

After removing the portion needed, it’s time to preserve the leftovers

  • Prepare sheet pan with a layer of parchment (or wax paper)

  • Portion purée by tablespoons, spaced at least 1” apart, onto the parchment

  • Very lightly tap the sheet pan on the countertop to flatten purée disks

  • Place filled sheet pan to freezer

  • Freeze until firm (may take up to 24 hours)

  • Transfer the frozen purée disks to a freezer-safe resealable bag

  • Freeze until needed, removing only the desired number of disks and keeping the rest frozen

  • Makes 8 to 12 (1 Tbsp) servings

HOW TO: Store Onions

Using a disposable container to store leftover onions is a great way to minimize the onion smell in your fridge, and reuse single-use plastic containers.

HOW TO: Store Onions

Not using the full onion?

Peel onion and trim off amount needed

Remaining amount - 

  • Place inside a cleaned sour cream/cottage cheese container

  • Using a permanent marker, write ONIONS on the container

  • Place in refrigerator and use remaining onion as needed

Generally keeps for 1-2 weeks depending on initial freshness of the onion.

Sour cream container is a perfect receptacle because

  • you were going to trash it anyway so once it's irredeemably onion-scented then toss it

  • it’s a second purpose for a formerly single-use container 

  • the lid seals tightly and effectively prevents the onion aroma from permeating the rest of the items in the refrigerator

Learn how to store extra butter to avoid the dreaded refrigerator smell contamination.

Not using the full cube? 

  • Unwrap wax paper 

  • Lightly score cube to identify the 8 tablespoons 

    • Mark half, then half of halves, then half of those halves = 8 tablespoons

  • Cut off butter needed

  • Rewrap remaining & store in refrigerator

Magically easy to select exactly the amount needed. 

Butter remains deliciously fresh.

WHY?

Pre-measured packaging is great . . . but if you cut off the wax paper at the mark then there is no wax paper to cover the end to protect the remaining butter from the dreaded refrigerator smell contamination. No one wants that.

No waste! Butter is one of the most delicious things ever created and it's used to make even more deliciousness . . . you don’t want to lose one bit of it.

HOW TO: Store Cilantro

Learn how to store cilantro in your refrigerator so it'll last for weeks, instead of days.

HOW TO: Store Cilantro

Often cilantro acts as a fresh garnish and it's only necessary to use about 20% of the bunch. That means the potential for 5 meals! Only, it's cilantro. A soggy mess literally seconds after placing the produce bag in the refrigerator. Like, you close the door and bam! Grossness.  

But wait. The most magical thing . . . pretend your cilantro is fresh cut flowers . . .

Here are easy steps that guarantee your cilantro will stay fresh and delicious for 1 or 2 or even 3 weeks!! For serious.

  1. Remove from produce bag - save the bag

  2. Check bunch, removing any leaves showing signs of degrading

  3. Trim stems, removing about 1/2"

  4. Fill a jelly or pint jar about half full with cool water (cleaned yogurt container works great too)

  5. Place cilantro stems into the jar, with the ends submerged

  6. Use that produce bag as a cap over the leaves, extending down over the top of the jar

  7. Loosely knot the corner of the bag to keep it in place, allowing some airflow

  8. Store in the refrigerator

  9. Refresh the water every 2-4 days, removing any suspicious leaves at that time

  10. Enjoy many meals out of one bunch of fresh cilantro!

Try it out. Brenda has, more than once, stopped strangers purchasing cilantro in the grocery store to share this tip. I guess we all do what we can to make the world a better place.
